If you wish to Search Engine Optimize WooCommerce product categories, the simplest way to do so is to use the Yoast SEO plugin.

Just for this feature alone that works beautifully out-of-the-box, I recommend the Yoast SEO plugin for all WooCommerce installations.

The Yoast WordPress plugin allows you to add Titles, Description and Keyword meta-tags for all WooCommerce categories.
